Irish Potato Cakes!  I was literally in heaven the moment I tasted these Chef Concetta masterpieces.  And the fact that the recipe calls for leftover mashed potatoes makes me smile!  To mimic the so-called Most Interesting Man in the World – “I don’t often have leftover mashed potatoes, but when I do I make Irish Potato Cakes.”  Someone get me a t-shirt with this saying on it!!!

Irish Potato Cakes

Ingredients 

  • 2 cups mashed potatoes leftover from previous meal
  • 1/3 cup flour all-purpose, plus more for kneading
  • 2 tbsp milk whole
  • 1.5 tbsp chives chopped
  • salt and pepper to taste
  • 2 tbsp butter

Instructions 

  • Combine mashed potatoes, flour, milk & chives in a bowl; knead until smooth. Season with salt & pepper. Turn the dough out onto a floured surface. Roll the dough into 1/2 inch thick round. Using a cookie cutter, cut into cakes.
  • Melt butter in a large skillet over medium-high heat. Cook the patties until golden brown, about 4 minutes per side.
