It’s one of our favorite times of the year… cherry season! We love cherries just about any way you can serve them but this just might be our new favorite cherry recipe. It’s quite unique and it’s always fun to serve something a little different.

Cherry Bruschetta

Servings18 slices

Ingredients 

  • 18 slices baguette 1/2" thick slices
  • 1+1 tbsp olive oil
  • 1-1/2 cup cherries sweet dark red or Rainier cherries, pitted & coarsely chopped
  • 1/4 cup cilantro chopped
  • 1/4 cup yellow bell pepper diced
  • 3 green onion chopped fine
  • 2 tbsp lime juice
  • 1 tsp lime zest
  • 1/2 tsp garlic salt
  • 1/4 tsp pepper
  • 2 oz mozzarella cheese fresh, sliced thin
  • 8 leaves basil sliced thin julienne strips

Instructions 

  • In a large mixing bowl, toss together cherries, cilantro, yellow pepper, green onion, lime juice, lime zest, garlic salt, pepper & 1 tbsp olive oil. Mix well.
  • Toast one side of baguette slices at 350 for 5 minutes. Turn slices, brush with remaining olive oil & bake an additional 5 minutes.
  • Top each slice of toasted baguette with a thin slice of fresh mozzarella cheese, a heaping spoonful of cherry mixture & garnish with fresh basil. Serve warm or cold.
