Honeycrisp Waldorf Salad

Waldorf Salad – a classic way to enjoy apples!  This salad was born in the 1890’s at the Waldorf Hotel in NYC.  Each household & chef makes the Waldorf Salad in their own unique way but 1 ingredient always stays the same: APPLES.

Try one of my favorite recipes for Waldorf Salad!  This one is from Superfresh Growers, but you know how I like to be bossy… Their recipes calls for apples, please Produce Moms… use HONEYCRISP APPLES.  And this makes enough for a crowd.  Perfect for impressing the neighborhood PTA moms or your in-laws 😉

Honeycrisp Waldorf Salad

Ingredients 

  • 8 cups apple Honeycrisp, cored & diced (about 10 large apples)
  • 1 cup pineapple juice
  • 12 cups rice brown or white, cooked & chilled
  • 4 cups celery chopped
  • 4 cups walnuts
  • 3 cups raisins
  • 1 1/2 cups carrot shredded or chopped
  • 3 cups yogurt plain or vanilla
  • 1 1/2 cups mayonnaise light
  • 1 tbsp salt
  • 1 tsp cinnamon
  • 1/2 tsp corriander ground (this is optional)
  • 2 heads lettuce butter or leaf

Instructions 

  • Toss apples with pineapple juice, drain if necessary.
  • Stir in rice, celery, walnuts, raisins & carrots.
  • In a separate bowl, blend together yogurt, mayo, salt & spice.
  • Stir dressing into apple mixture. Cover & refrigerate until ready to serve.
  • Serve over a bed of lettuce.
