I love turnips!

You don’t hear that very often, huh?  It’s not that people dislike turnips… it’s that most people have never had one!  That’s silly because this root veggie not only tastes great, but it’s full of guilt-free nutrition too!

1 cup of turnips has LESS than 60 calories & only 1 gram of fat.  Plus, you’re talking just 2g of natural sugar, 8g of carbohydrates, 5g of dietary fiber & 5g of protein!  Turnips are also full of vitamins & minerals – notably, Vitamins A, C & K.  And let’s not forget the fact that they are ALWAYS very affordable.  Eat more turnips.  Have more money for shoes. :-)

I’m always watching my carbs, yet craving starchy foods.  It’s annoying, but just 1 of the reasons turnips are an easy favorite & a Produce Mom Pick!  If you are diabetic, a paleo diet disciple, or maybe just someone who is super mindful of what you eat– you get it.  This root vegetable r0cks!!!!

My favorite way to prepare turnips is to oven roast them.  An easy recipe follows – Enjoy!

OVEN ROASTED TURNIPS

  • 3 turnips
  • 1 T olive oil
  • Salt & Pepper, to taste

Preheat oven to 400°F.  Peel & dice turnips.  Toss with olive oil & salt/pepper.  Form a single layer on a baking sheet & roast for 25-35 minutes.  Turnips will be soft & a golden brown color when done.
