Pear ricotta pancakes drizzled with cinnamon maple syrup is a great way to start any holiday or celebratory brunch. How good would these smell on Christmas morning? How quickly would these be gobbled up at a bridal shower brunch?

Pear Ricotta Pancakes

The Ricotta Cheese makes these pancakes light and flavorful and go so well with the pears! Pour a bit of sweet cinnamon maple syrup on top and wow, what a treat! 

For a beautiful presentation, add some pear pieces and crushed nuts (walnuts or pecans work best).

Bosc pears are recommended for this recipe, but you can use any variety you’d like. Bosc pears have a firm, dense flesh which is ideal for baking, broiling, or poaching. Their flavor pairs well with spices like cinnamon and nutmeg without being overwhelmed.

To determine if a pear is ripe, check the neck™! Simply apply slight pressure to the neck of the pear with your thumb. If it yields to the pressure, it is ripe.

Pear Ricotta Pancakes With Cinnamon Maple Syrup - Sage Fruit

Servings15 pancakes

Ingredients 

Pancakes - Dry Ingredients

  • 1 cup all-purpose flour
  • 1-1/4 tsp baking powder
  • 1/2 tsp nutmeg

Pancakes - Wet Ingredients

  • 2 pear peeled, cored, diced (Bosc pears recommended)
  • 1-1/4 cup ricotta cheese
  • 4 tsp sugar
  • 2 egg
  • 3/4 cup milk
  • 1 lemon juice only

Syrup

  • 3/4 cup maple syrup
  • 1/2 tsp ground cinnamon

Instructions 

Pancakes

  • Place diced pears in a microwavable container with lid. Microwave pears for 2 minutes or until tender. Remove lid and let cool.
  • In separate bowl, combine dry ingredients and set aside. Combine wet side ingredients (not pears) in bowl of electric mixer. With mixing spoon, stir in ½ of the pears (save other half for pancake garnish) and dry ingredients, being careful not to over mix.
  • Heat non-stick skillet to about 350 degrees on top of stove. Ladle batter onto hot skillet. Cook pancakes until bubbles form on top, then flip and continue cooking until golden brown.
  • Plate warm pancakes and top each stack with a spoonful of remaining microwaved diced pears and chopped pecans (optional).

Syrup

  • Mix together the maple syrup and ground cinnamon.
  • Warm in microwave for just a few seconds and serve with pancakes.
