Lemon Thyme Bruschetta

A light summery appetizer

Ingredients 

  • 1 baguette thinly sliced
  • 8 oz ricotta cheese
  • 1 lemon zested
  • 1 tsp olive oil
  • 1 clove garlic
  • 1 tbsp honey
  • 8 sprigs fresh thyme
  • salt and pepper to taste

Instructions 

  • Preheat oven to 425. Mix together ricotta and lemon zest. Salt and pepper to taste.
  • Brush baguette slices with olive oil and toast 5-7 minutes. Rub slices with garlic clove.
  • Spread slices liberally with the ricotta mixture. Sprinkle with honey and thyme. Serve warm and enjoy!
