Rotisserie Chicken Salad with Sonya Apples

Sonya apples are a cross between Gala and Red Delicious apples, and are back in season! Sonya apples give off a magical aroma, and they are bursting with a sweet flavor! The Sonya was discovered in 2002 in New Zealand, and is currently grown on 400 acres in Washington state’s Yakima Valley.  Seek out this bi-colored apple variety in your grocery stores this week! Can’t find them in your produce department? Ask your store to bring it in for you! (How do you think my local grocery store started carrying the Sonya?!)  Sonya apples have a long-lasting shelf life & are perfect for your fruit bowl this season.

Not only are Sonya apples delicious out-of-hand, they are ideal for recipes. Rotisserie Chicken Salad with Sonya Apples

Ingredients 

  • 3 cups rotisserie chicken meat diced
  • 2 sonya apples cored & diced
  • 1/2 cup mayonnaise or greek yogurt
  • 2 celery ribs diced
  • 1/2 sweet onion diced
  • salt & pepper to taste

Instructions 

  • Combine all ingredients together in a bowl.
  • If the salad is too dry, you can add more mayonnaise or greek yogurt.
  • Season to taste with salt & pepper.
