Instructions
  1. In slow cooker, add chicken, olive oil, carrots, celery, broth, salt and pepper.
  2. Cover and cook on low for 6 to 8 hrs. or high for 3 to 4 hrs. (or until chicken is done and carrots are tender).
  3. Add cooked rice and stir to combine. Continue cooking for 10 minutes.
  4. Put soup in bowls, and garnish with parmesan cheese and parsley.
